🧡 Butternaut Squash Soup Recipe
Ingredients
🎃 1 butternut squash
🥩 2 beef Knorr cubes (for that umami kick!)
🧄 1 whole garlic
🧅 1 red onion
🌶️ 1 red bell pepper
To stir when soup is heated
🍶 Sour cream
🌱 Green onions
🍾 Olive oil
🧂 Salt & pepper, onion powder, paprika
🌿 Italian seasoning, Thyme
🧀 Cottage Cheese
🧀 Parmesan cheese
Steps to cozy creaminess
1️⃣ Preheat your oven (or air fryer!) to 400°F.
2️⃣ Prep the squash:
- Cut it in half and scoop out the seeds.
- Score the flesh in a checkerboard pattern for even cooking.
3️⃣ On a baking tray, arrange all the “blend” items:
- 🧄 Garlic bulb (sliced in half and wrapped in foil for that roasted goodness).
- 🧅 Red onion, bell pepper, thyme, seasonings and of course, the squash.
- Drizzle with olive oil, and sprinkle with onion powder and smoked paprika for a flavor boost.
4️⃣ Roast for 45–50 minutes until everything is golden and tender. (we used our trusty air fryer, but the oven might be better for larger portions.)
5️⃣ Once roasted:
- Scoop out the squash flesh.
- Toss it all into a blender, including the roasted veggies.
- Squeeze the roasted garlic cloves out of their skins (so satisfying! 😌).
- Add cottage cheese for extra protein! Blend until smooth and dreamy.
6️⃣ Make the broth:
- Heat the mixture in a pot.
- Add 2 cups of water and melt the 2 beef Knorr cubes into it. (Think of this as the savory hug for your sweet squash.)
7️⃣ Taste and tweak: Add salt, pepper, or seasoning until it’s just right. Add in a handful of parmesan cheese for extra kick.
8️⃣ Garnish: Top with green onions and a dollop of sour cream. 🌟 Serve your masters ~
